How to make Nattu Kozhi Rasam
Ingredients
For Chicken Broth
- 1/2 kg Nattu kozhi Chicken
- 1 tsp turmeric
- 1 tsp salt
- 1-litre water
For Tempering
- 1 tsp oil
- 1 tsp cumin seeds
- 2 springs curry leaves
- 1 medium sized onion, chopped
- 1 medium sized tomato, chopped
- 1/2 cup tamarind juice
- 1 tsp salt
For Rasam Powder
- 1 teaspoon oil
- 2 garlic cloves
- 1 tsp black pepper
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds ( sombu )
- 5 dried red chillies
Method of preparation
- Roast all the ingredients listed under rasam powder in a tsp of oil until slightly brown and fragrant. Grind the mixture to a very fine powder. And keep it aside.
- Boil the chicken bones with turmeric, salt and water for 3 to 4 whistles in a pressure cooker. Switch off the flame and wait for the pressure release.
- Heat oil in a pan and add in the cumin seeds and curry leaves.
- Now add chopped onions and fry for a couple of minutes, then add chopped tomatoes and the salt. Saute till the tomatoes are cooked.
- Add 1/2 cup tamarind juice.
- Add the chicken stock and let it simmer for 5 minutes.
- Add in the ground rasam powder and saute for another couple of minutes.
- Switch off the flame and garnish with chopped cilantro and serve hot.
