Arabian Chicken Mandi Rice

How to make Arabian Chicken Mandi Rice

Ingredients

  • 1/2 kg chicken 
  • 1 1/2 soaked basmati rice
  • 4 green cardamom
  • 6 cloves
  • 2 cinnamon stick
  • 10 raisins 
  • 2 big onion chopped finely
  • 2 tbsp Arabian spice powder
  • 1 tsp turmeric powder
  • 1 tsp saffron powder
  • 1 chicken stock cube
  • 2 tbsp olive oil
  • 1 ltr water
  • 1 charcoal piece 
  • Salt as needed

Method of preparation

  • Clean the chicken pieces and pat it with a kitchen towel.
  • Now the chicken is dry, add turmeric, Arabic spice powder, salt, saffron powder and mix well. Keep aside.


  • Now take a pan add oil, chopped onions and fry them until golden brown colour.
  • Now take a big vessel( here I made this mandi rice in an electric cooker ).
  • Add oil, fried onions, cloves, cinnamon, raisins, cardamom. Saute it well.
  • Now add the soaked rice and saute for 2 min.

  • Now add water, chicken stock cube and salt as needed.
  • Give a nice mix.

  • Now take a steaming plate which I have shown in the picture and place the marinated chicken pieces. 
  • Now place this steaming plate on top of the vessel in which the rice is cooking.
  • Now cover and cook for 20 min.

  • By cooking this way the chicken stock will drop directly to the rice and it will give a super taste.
  • Now the rice and the chicken is ready.(After steaming the chicken if you want you can bake this chicken in the oven and then you can serve it with the rice.)
  • Now place the chicken pieces with the cooked rice.
  • Take an aluminium foil and make a cup shape and add 1 tbsp oil and hot charcoal.


  • Now keep this cup Inside the electric cooker and cover it. Keep it aside for 10 to 15 min.
