Thalassery Chicken Dum Biryani Recipe

So today am here to show you another biryani recipe which is Thalassery Chicken Biryani. Let's see how to make it.

How to make Thalassery Chicken Dum Biriyani

Ingredients

For layering


  • 2 tbsp ghee
  • 1 tbsp Biryani masala 
  • 1/2 cup fried onions
  • 1/4 cup fried cashews and raisins
  • 1/2 cup chopped mint leaves and coriander leaves
  • Food colour ( optional)

For gravy


  • 3 tbsp ghee/oil
  • 1 cup sliced onions 
  • 2 tbsp ginger garlic and green chilli paste ( 3 green chillies)
  • 1/2 kg chicken 
  • 1/2 tsp turmeric powder
  • 1 tomato chopped
  • 2 tbsp Curd

For Biryani rice


  • 2 cup basmati rice/jeerakasala/kaima rice
  • 2 tbsp ghee
  • 1 bay leaf
  • 1-star anise
  • 3 green cardamoms 
  • 5 cloves
  • 1 cinnamon stick
  • Salt as needed
  • 4  cups water

For Biryani masala


  • 1-star anise
  • 3 green cardamoms 
  • 5 cloves
  • 1 strand mace
  • 1/4 tsp nutmeg powder
  • 1/2 tsp shahi jeera
  • 1 tsp fennel seeds
  • 3 red chilli
  • 1/ 2 tsp peppercorns 

Method of preparation


  • First, let's make the Biryani masala for that add the spices to a blender and make a fine powder of it and set it aside.( Here I have roasted the spices but that step is totally optional)
  • Take a pan add ghee and onions saute it until translucent.
  • Add ginger garlic and green chilli paste saute until raw smell goes.

  • Now add the cleaned chicken pieces and saute for 2 to 3 min. The colour of the chicken has to turn pale white. Add the turmeric and grounded biryani masala. 

  • Mix all together and cover cook for 10 - 15 min. By now the chicken gets little tender.
  • Now add chopped tomato and curd mix well and cook cover until chicken is fully cooked in low flame. 
  • Now you 'll get a thick chicken gravy is ready. 
  • Now let's make rice heat a pot add to 3 tbsp ghee and saute the spices.
  • Add drained rice and saute for 5 min.
  • Add the water and salt as needed.


  • Once the rice is done drain it and keep aside.
  • Now let's start to layer the biryani for putting in dum, for that take a large vessel drizzle some ghee.
  • Add the chicken gravy and spread evenly and add fried onions, cashews, raisins, chopped mint and coriander leaves, a pinch of Biryani Masala. 


  • Now add the cooked basmati rice spread evenly and continue this process.
  • Finally, add some drops of food colour and keep it in dum as I shown in the picture.
  • Keep in medium flame. Once it is done allow the biryani to rest for a while. Check the bottom, the moisture of the gravy would have evaporated if not allow it cook for some more min. 


Tasty Thalassery Chicken Biryani is ready now serve with onion raita.
