How to make Hyderabadi Chicken Dum Biryani
Ingredients
For Biryani masala
- Cinnamon 2piece
- Fennel Seeds 2 tsp
- Cumin Seeds 1 tsp
- Shahi Jeera 2 tbsp
- Bay Leaf 2
- Green Cardamom 5
- Black Cardamom 1
- Cloves 5
- Mace 2
- Kalpasi 2
- Star Anise 1
- Whole Black Pepper 1 Tsp
For Chicken marination
- 250 gm chicken
- 1 cup curd
- 1 tbsp biryani powder
- 1 tbsp Kashmiri chilli powder
- 2 green chilli slits
- 1 tsp turmeric powder
- 1 tbsp ginger garlic paste
- 1/2 cup of fried onions
- 1/2 cup chopped mint and coriander leaves
- salt as needed
For biryani rice
- 200 gm basmati rice
- 1 tsp oil
- salt as needed
- water as needed
For Garnish
- 1 cup fried onions
- 1 cup finely chopped mint and coriander leaves ( mixed )
- Food colour ( optional)
- 1 tsp biryani masala
Method of preparation
- Take a mixing bowl add all the ingredients listed below the marination and mix them together. keep aside for 2 - 4 hrs.
- Meanwhile, let's cook the rice for biryani, for that heat pot with water, add salt and oil.
- Add the soaked basmati rice once the water boils.
- Rice should be half cooked and drain it. keep aside.
- Now let's keep dum for that take pressure cooker add 2 tbsp ghee and spread the marinated chicken in it.
- On top of it add half of the half cooked rice and spread all over and sprinkle some biryani masala, fried onions, greens (mint and coriander leaves).
- Again do the same process. lastly, add food colour and cover the pressure cooker using a white cloth the on top it cover it with a lid tightly.
- Place this cooker on top of a dosa pan and keep cooking in medium flame for about 25 min.
- Then reduce the flame and cook on low flame for 10 min.
- Now switch off the flame and don't open it quickly let it be closed for some more time.
Tasty and spicy Heydarabadi Chicken Dum Biryani is ready now.
