Chettinad Mutton Biryani

How to make Chettinad Mutton Biryani Recipe


Ingredients

For Mutton

  • Mutton-250gms
  • Chili powder-2 Tsp
  • Turmeric powder-1 Tsp
  •  ginger garlic paste-1 Tsp

To Grind

  • Red chilli-2
  • Green chilli-2
  • Small onion-10
  • Ginger and Garlic Paste-1Tbsp
  • Fennel seeds-1 teaspoon
  • Clove-2
  • Cardamom-2
  • Cinnamon-2 pieces
  • Mint leaf-handful

For Biryani

  • 1 1/2 cup basmati rice
  • 2 onions finely sliced
  • 2 tomato finely sliced
  • Mint leaf-handful
  • Fennel seeds-1 tsp
  • Clove-2
  • Cardamom-2
  • Cinnamon-2 pieces
  • 2 bay leaf

Method of preparation

  • First, take a small cooker and add Mutton, ginger garlic paste turmeric powder, red chilli powder, salt and Pour 1 ½ cups of water. Close the cooker and cook for 8 whistles.

  • While cooking the mutton, grind the items listed below To Grind and keep it aside.
  • Soak basmati rice for 30 min and keep it aside.


  • Once the mutton is cooked, After the pressure gets released, open the cooker
  • Strain the mutton stalk and keep aside. This has to be used instead of water.
  • Now let's start to make biryani for that take a big cooker and add oil/ghee, all spices listed below For Biryani.
  • Now add sliced onions and Saute it till caramelized and Add the ground masala and sauté for 2 minutes.
  • Now add the tomato pieces and sauté till they become soft. Add the cooked mutton pieces and mix well.
  • Now add 2 tbsp of curd and mix well.




  • Measure the mutton stalk you have.
  • For 1 ½ cups of rice, you have to pour 2 cups of water if you have 1 cup of stalk then add 1 more cup of water or if you have 1/2 cup of stock then add 1 1\2 cup of water.
  • When this mixture boils, add the salt needed and add drained rice and  Mix everything well now close the cooker and cook for 2 whistles.
  • Once the pressure release fluff the rice using a spatula and serve it hot with Onion Raita.
