How to make Malai Gobi Recipe
Ingredients
- 1 medium head of cauliflower
- 1/2 cup cashews
- 1 cup finely chopped coconut pieces
- 2 tsp coconut oil
- 1 onion (finely chopped)
- 2 tsp ginger-garlic paste
- 2 green chilli
- 1/4 tsp pepper powder
- 1 tsp cardamom powder
- 1 tsp chat masala
- Juice of 1/2 lemon
- 1 tbsp kasoori methi
Method of preparation
- Take a blender and Blend the cashews and coconut pieces into a very smooth paste and Set aside.
- Now take onions to a blender, add 1/4 cup of water and the green chilli, pepper powder and blend into a smooth paste and set aside.
- Take a pan, heat the 2 teaspoons of coconut oil. Add the ginger-garlic paste and saute until raw smell goes and add bay leaf, star anise, cinnamon stick, cardamom and saute for a minute. Now add the onion paste and bring it to a simmer.
- Add the cashew-coconut cream and stir well to mix. Add water if the mixture is too thick and add cardamom powder, pepper powder, chat masala, and kasoori methi.
- Add the cauliflower florets and Stir well to mix, bring to a boil, and cover with a lid. Cook on a medium-low flame, stirring occasionally.
- I like this curry rather thick and creamy so don't add too much water in it.
- Once the curry comes to a boil, turn off the heat and add the lemon juice and 1 tbsp fresh cream and salt to taste. Mix it well and creamy Malai Gobi is ready now.
