How to make Whole Roasted Mexican Chicken With Veggies
Ingredients
- 1 whole chicken
- 1/4 cup oil
- Juice of 1 lemon
- 1 tsp achiote powder
- Salt as needed
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp cumin powder
- 1/4 tsp chipotle chili powder
- 1 onion, cut into wedges
- 2 carrots cut into 1-inch chunks
- 1 whole corn cut into pieces
- 1 cup broccoli
- 5-6 garlic cloves
Method of preparation
- Defrost the chicken and clean it very well, Pat the skin dries with paper towels and preheat the oven.
- Combine the oil, lemon juice, achiote powder, salt, onion powder, garlic powder, black pepper, cumin, and chipotle chili powder together in a bowl. Whisk to combine.
- Place the onion wedges, carrots, broccoli, and corns in a large oven-safe skillet. Set the chicken on top of the vegetables, then drizzle the spice mixture over the chicken, rubbing it around to coat the skin.
- Place the chicken into the oven and roast in the oven until golden brown color it will take about 50 minutes to 1 hour. You can tent the chicken with foil if it seems to be browning too.
- You can see the chicken cooked pretty well and the veggies. Serve it hot.
