Chicken is one of the best non-vegetarian sources of protein. It is lean meat, which means that it contains more amount of proteins and less amount of fat. Apart from protein, chicken is rich in several minerals like phosphorus and calcium, that helps keeps bones in mint condition. Also, it has selenium which has been known to cut risk of arthirits.Ingredients
- Basmati rice 2 cup
- Chicken 1/2 kg
- 2 cloves
- 1 cardamom
- 2 tej patta
- 1/2 tsp Kus kus
- 1 tsp turmeric powder
- 1 tsp chilli powder
- 1 tsp Biriyani masala paste
- Oil and ghee 3 tbsp each
- 1/2 tsp ginger garlic paste
- Shallots 10 - 15 no
- 2 green chilli
- Saffron threads
- 2 tsp milk
- 6 cashews
- 1 onion
- Chopped mint and coriander leaves
- Salt as needed
- Water as needed
Method of preparation
- Take a vessel add water, 2 tsp oil, salt as needed, 1 cardamom, 2 cloves, 1 cinnamon stick let the water boil.
- When water boils add soaked basmati rice into the vessel(Rice shouldn't be fully cooked , half cooked rice is needed)
- Keep the half cooked rice aside
- Make a paste of small onions and green chilli
- Take a pressure cooker add ghee and onion paste ,ginger garlic paste;cook for 2 min
- Make a paste of fennel seeds, cardamom, poppy seeds, tej patta by add 1 tsp water so masala paste is ready
- Add this masala paste and chopped tomatoes cook well
- Add 1 tsp turmeric powder , 1 tsp red chilli powder, 1/2 tsp coriander powder mix well
- Add chicken pieces and 1 cup water and pressure cook for 1 whistle
- After 1 whistle release the pressure and cook again with out lid so that water gets evaporated and thick gravy produce
- Now fry some onions, cashews in ghee keep it aside
- Take a 1 tap milk and add saffron threads mix well . You can also use food color instead of saffron threads
- Now take a pan add ghee to all surface and add half cooked rice on top of it add chicken gravy which we have already prepared. On top of it add saffron milk and fried onions, cashews . Repeat the layer process again
- Garnish with some chopped coriander leaves and mint leaves . close the vessel tightly
- Now heat a pan add water on top place this vessel which we have closed tightly . On top of it place another vessel full of boiling water and close it . Now keep the stove in simmer and make dum for about 20 min
Now tasty chicken dum biriyani is ready . You can have with boiled eggs and raita.
