How to make Naatu Kozhi Biryani
Ingredients
For chicken marinade
- 1/2 kg Naatu Kozhi ( country chicken)
- 1 tsp turmeric powder
- 1 tsp salt
- 1 tbsp red chilli powder
- 1 tbsp coconut oil
For biryani Masala
- 1 big tomato
- A handful of mint and coriander leaves
- 1 small piece ginger
- 2 garlic cloves
- 2 green chillies
- 2 tsp lemon juice
- 1/2 cup curd
For biryani
- 3 tbsp ghee
- 2 cup soaked basmati rice
- 3 cup water + 1/2 cup
- 2 onions finely sliced
- 2 tomatoes finely sliced
- 1 tsp ginger garlic paste
- 1/2 tbsp red chilli powder
- 1/2 tbsp garam masala
- 3 green cardamom
- 1 bay leaf
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 4 cloves
- 1 cinnamon stick
Method of preparation
- First, let's start with chicken marinating for that take bowl add all listed below chicken marinade and keep aside for 30 min.
- Take a blender and add all the ingredients listed below biryani masala and make a fine paste. Keep it aside.
- Heat a pressure cooker add ghee, cinnamon, cardamom, cloves, fennel seeds, cumin seeds, bay leaf.
- Add chopped onions and tomatoes and saute it until tomatoes get mushy.
- Now add chickens and masala paste and mix well.
- Check for salt and if you needed to add it. And red chilli powder, garam masala and 1/2 cup water.
- Cover and cook for 15 - 20 min.
- Now the chicken is half cooked add the soaked basmati rice and 3 cup water.
- Cook for 3 whistles.
- Serve hot with onion raita, boiled eggs.
