Ambur Mutton Biryani Recipe

Today am here to share you one of my favourite biryani recipe which is Ambur Mutton Biryani. Let's see how to make it.

How to make Ambur Mutton Biryani Recipe

Ingredients

  • 500 gm mutton
  • 1 cup Jeera Samba Rice
  • 2 onions sliced
  • 1 tomato slices
  • 2 tbsp ginger garlic paste
  • 7 dry red chilli 
  • 2 tbsp chopped mint and coriander leaves 
  • 1/4 cup curd
  • 1/2 lemon juice
  • 1 cinnamon stick
  • 2 cardamom 
  • 5 cloves
  • Salt as needed
  • 2 cups of water 
  • 4 tbsp oil

Method of preparation

  • First, clean mutton pieces with turmeric powder and keep aside.
  • Now soak jeera samba rice for 30 min.
  • Take a pressure cooker and add oil in it.
  • Once the oil gets heat to add cloves, cardamom, cinnamon and fry it for a min.
  • Now add 1 tbsp sliced onion and saute it for 2 min.

  • Now add ginger-garlic paste and saute it until raw smell goes.
  • Meanwhile, take a cup of hot water and soak the dry red chillies for 5 min and make a fine paste of it.


  • Once the raw smell goes add the chilli paste and saute for a min.
  • Now add the remaining onions and saute it until translucent. 
  • Now add tomatoes and cook for 2-3 min and then add mint and coriander leaves, mix well and saute for 2 min.



  • Now add the mutton pieces and mix well.
  • Add 1/4 cup curd and 1/2 cup water,  mix thoroughly and cover cook for 30 minutes without keeping a whistle on it.



  • Now the mutton cooked well, let's add 1 & 1/2 cups of water.
  • When water starts to boil add soaked samba rice and half lemon juice, salt as needed.



  • Now cook it without a lid in medium flame.
  • Now you can see that the water is absorbed by the rice, now close the lid and put a whistle on it.

  • Now place an iron tawa or pan on the stove top and place the cooker on top of and keep it in dum for about 20 min.
  • Since we are keeping it on tawa or pan we will not get any whistles.
  • After 20 min opens the lid and using a spatula just fluff the rice.
