How to make Mughlai chicken korma
Ingredients
For onion paste
- 1 cup fried onions
- 6 almonds
- 6 cashew nuts
- 1 teaspoon poppy seeds
For korma
- 500gm chicken
- 3 cloves
- 2 cardamom
- 1 cinnamon stick
- 1-star anise
- 2 bay leaf
- 1 tsp cumin seeds
- 1 tbsp ginger garlic paste
- 2 tomato finely chopped
- 1 green chilli finely chopped
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 2 tbsp red chilli powder
- 1/4 tsp cumin powder
- 1/4 tsp garam masala
- 1 tsp crushed Kasuri methi
- 1 tbsp fresh cream
- 2 tbsp oil or ghee
- 1/4 cup curd
- 1 cup of water
- Salt as needed
Method of preparation
- Firstly let's start with cleaning the chicken pieces and keep it aside.
- Now take a blender to add fried onions, almonds, cashew nuts and poppy seed and make a fine paste of it.
- Heat a pan add oil or ghee then add all the spices listed above.
- Now add ginger garlic paste and saute it until raw smell goes.
- Now add the chicken pieces and mix well and keep the flame in medium.
- Add finely chopped tomatoes and green chilli.
- Now turmeric powder red chilli powder Suman powder coriander powder and salt as needed mix well and cook for 2 to 3 minutes.
- After 2 minutes add 1/4 cup of curd and one cup of water and mix it well.
- Let it cook for another two minutes after 2 minutes add onion paste and mix well.
- Now let it cook for 10 to 15 minutes or until chicken pieces cooked well.
- Now the chicken pieces are cooked very well so let's add garam masala and fresh cream. Mix well and cook for 2 more minutes.
- And here the chicken korma is ready to garnish it with crushed Kasuri methi.
