How to make vegetable Biriyani Recipe


Ingredients

  • 2 cup basmati rice
  • 2 cup mixed veggies ( peas, carrots, beans, capsicum, soya chunks, potato)
  • 2 onions finely sliced
  • 1 tomato finely sliced
  • 1 tsp ginger garlic paste
  • 2 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp pepper powder
  • 1 tsp garam masala ( biriyani masala)
  • 1 cup curd
  • 3 cup water
  • 1 cup finely chipped mint and coriander leaves
  • 1 cardamom
  • 1 tej patta
  • 2 cinnamon stick
  • 1 tsp fennel seeds
  • 1 star anise
  • oil / ghee 4 tsp 
Method of preparation
  • Take a mixing bowl add curd , chilli powder, coriander powder, turmeric powder, garam masala, veggies , chopped mint and coriander leaves and marinate all together . keep aside for 1 - 2 hrs
  • Heat the pressure cooker add ghee , cardamom, cinnamon, tej patta, fennel seeds , star anise ,ginger garlic paste . saute for 1 min .
  • Add the sliced onions and tomatoes saute till the onions cooked well.
  • Add the marinated veggies and add 3 cups of water . let the water starts to boil add the soaked basmati rice and cook for 3 whitsles.
  • when pressure release add fried onions , cashews and dried grapes . 
Tasty and easy pressure cooker vegetable biriyani is ready now . Enjoy with curd riata .
