Thai Red vegetable Curry Recipe

How to make Thai Red Vegetable Curry

Ingredients

  • 1 tbsp coconut oil 
  • 1 onion, chopped
  • Pinch of salt, more to taste
  • 1 tbsp finely grated ginger
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 carrots, chopped
  • 2 tablespoons Thai red curry paste
  • 1 cup thick coconut milk
  • ½ cup water
  • 1 ½ cups thinly sliced kale
  • 1 tsp  sugar
  • 1 tbsp soy sauce
  • 2 tsp fresh lime juice
  • Garnish with a handful of chopped fresh cilantro

Method of preparation

  • To make the curry, heat a pan with deep sides over medium heat. Once it’s hot, add the oil. Add the onion and a sprinkle some salt and cook, until the onion translucent. 
  • Add the ginger and garlic and cook until fragrant, about 30 seconds, while stirring continuously.

  • Add the bell peppers and carrots. Cook until the bell peppers are fork-tender. Then add the curry paste and cook, stirring often, for 2 minutes.

  • Add the coconut milk, water, kale and sugar, and stir to combine. Bring the mixture to a simmer over medium heat.

  • Remove it from the heat and season with soy sauce and rice lime juice. 
  • Add salt to taste.
  • Garnish with chopped cilantro and serve it hot.
